Sulfur Dioxide (SO2) and the way it is used at each step of the winemaking process is explained by Fred Scherrer of the Scherrer Winery. In the vineyard, elemental sulfur is used to inhibit the growth of fungus called powdery mildew. Sulfur Dioxide (SO2) is used to help fermentation complete and preserve freshness and acidity in wine.
